Yellow tea is a rather rare category of tea. It is a bit similar to green tea in appearance and flavor but it typically does not have the grassiness of some green teas. Steaming is an additional step in the process of making yellow tea, which makes it somewhat softer in taste, silky even, yet with a surprising note of fermentation. A distant saltiness in our Mellow Yellow blend makes for the perfect match for raw seafood, like oysters. Truly magnificent what happens when those two meet.
